They’re so cheap out there, if you’ve ever seen them on a cookie sheet, you might think “Eh, chocolate chip cookies, been there, done that.” <–I have never had such a thought before; there will always be a place in my heart for chocolate chip cookies

But it’s so much more than the average chocolate chip cookie! The soft, sugary chocolate chip cookie surrounding the peanut butter filling may surprise people who don’t know what’s going on.

Chocolate chip cookie dough is very easy and difficult to put together. The only real difference is the touch of peanut butter added to the cookie dough.

I also double this recipe 100% (in my Bosch mixer). Cookies are very hard. And they go fast. You don’t want to find yourself with some chocolate covered peanut butter cookies.

Don’t be stupid. Mix sugar and PB until smooth. Then try not to eat it all before rolling in the cookies.

Roll a tablespoon of chocolate chip cookies into a rough shape. Place a spoonful of PB filling in the center and roll the chocolate chip cookie dough over and around the filling.

You are looking for a very dedicated, diligent, hard-working helper to roll out balls of sugar-filled cookies.

Take a shallow baking sheet and gently press the cookie dough balls until they are about 1/4 inch thick (or so).

I didn’t think cookies could be better until I tried cookie filling. Now I have it! This recipe is a favorite, along with cookie rolls and oatmeal cream pie. That’s great!

In our house we are crazy about all things peanut butter and chocolate. The two flavors are truly a match made in heaven. So I made these delicious peanut butter cookies and they were a hit! A rich and delicious chocolate chip cookie, filled with a peanut butter center. I love eating these warm, filled cookies that are soft and fluffy, and I love the contrast between salt and sugar. They are definitely on the casual side, but perfect for special occasions!

In a medium bowl, cream the peanut butter and powdered sugar together with an electric mixer until well combined. Then chill the mixture in the fridge while you make the dough.

Best Ever Stuffed Peanut Butter Cookies

Mix the sugar, brown sugar, butter and peanut butter together in a large bowl or the bowl of a stand mixer until light and fluffy. Add the egg and vanilla and beat until smooth.

Then add the flour, cocoa powder and baking powder and mix until you get a thick dough. When the mixture is curdling, add 1 to 2 tablespoons of milk.

Divide the dough into twenty equal pieces. I did this by dividing the dough in half, then into parts, then dividing the parts into five equal parts (they don’t have to be exact, but try to match them as closely as possible).

Then take the cold filling mixture out of the fridge and divide into 20 equal parts. Then roll into balls and set aside.

Place a piece of dough in the palm of your hand and press down. Then place a ball of the filling in the center of the dough and wrap the dough around it, rolling it into a ball to protect it.

Dust the top of the cookie ball with sugar, and place it on the baking sheet. Tap it lightly with your hand. Repeat with the remaining dough, spread it on the cookie sheet.

Bake the cookies in a 375ºF oven for 8 to 10 minutes, or until they are set and the edges are slightly cracked. Serve hot with a glass of cold milk!

Make the filling first, then chill in the fridge while you start the cookie dough. It will harden a little
